Finnochio. A bulb vegetable with crisp texture and mild aniseed flavour. Ferny leaves useful in sauces and the bulb can be eaten raw or cooked. Ideal with fish dishes. The seeds have culinary and medicinal  use. Most books say to sow in spring but here inland we find autumn sowing works best. Plants like rich soil and sunny position.
